Jalisco. This the home of Tequila Cuervo and Tequila Sauza,
two of the big names in tequila production. Tequila is an interesting
place to visit as a side trip from Guadalajara; it is only
40 miles west just off of the new tollroad that heads west
to Tepic. They have a new train called the TEQUILA EXPRESS
that goes to Tequila for an all day trip - and great great
fun when you go in a group!

the best agaves from a region known as Los Altos de Jalisco

Tequila Information -
- An On-Line Bartender. Tequila is produced from the juice
of the the agave plant mixed with previously fermented agave
juice (pulque), fermented for about two and a half days. Then
the mix is double distilled, producing a clear white tequila.
Gold tequila is aged on oak casks for up to four years. Mezcal
is produced more or less the same way as Tequila, but does
not come from the designated tequila area of Mexico.
